Not sure about the speed, but I have driven JW's pulsare. He is running 70+ with a stock 225 merc. Boat handels like its on rails.

My buddy who had the Pulsare and the 1999 Mercury Optimax ran 77.6 MPH with a 27" Tempest. He is experienced and knew how to set it up. Something like a 300 PM or 300X would push the 2100 over 85 MPH set up right...

If I am not mistaken, he had both power trim and tilt on the boat.
Have fun and play safe out on the water!

I've owned both hulls. Both are great, but the Pulsare handles better (and is faster) than the Starflight. The Pulsare replaced the Starflight in 1994, I believe. I'm not 100% sure on the specs, but they added a 6" pad to the bottom, got rid of the steps and redistributed the weight more towards the rear. I think the degree of deadrise may be different as well as strake and chine configuratoions....I like the Pulsare better, but the Starflight is also an excellent boat.
With both boats side by side with same motor and similar set-up, I would guess the Pulsare would run 4-5 mph faster.

JW is also getting a bit more spped with his because of the extra set back he added this winter. Plus, it is a Pro Max 225, not the standard 225 EFI. The Pulsare is an awesome all around handleing, speed, ect... boat!
