The aluminum prop on a big horsepower boat:

The aluminum prop has thicker blades, which causes less efficient hydrodynamics.

The aluminum prop will 'burn' holes in the face of the blade when run partially out of the water (which you do for best top speed). The air bubbles actually 'burn' holes near the center of the blade as you look at the prop from the back of the boat.

The aluminum prop flexes more, so it's 25" pitch becomes less pitch as you put more load on it.

So a stainless prop is thinner so it goes through the water better, is stronger with a better finish so it doesn't 'burn' and 'bend' like an aluminum. Plus, all the high speed props are designed and made out of stainless anyway, so you'll never find a high speed prop in cheap aluminum.
