steaming exhaust

just put the boat in after new power plant and there was a lot of steam out the exhaust, could i have to hot of thermostat ? i have a 160 now, the temp comes up to 175-180 when ripping across the lake, she is running real good too. anybody with a theory as to why, thanks

i got a 87 senator , 350 bored 40 over,mild porting, comp cam 270h , 9.8 compression, i'm spinning a 25 pitch @4900 rpm
 
Mine steams every spring and late fall when the water temps are below 50 degrees F.........................
 
would it be safe to say that if the water is getting into the manifold before the reducers that come off the ends it will steam?, mabe a lower temp thermostat would help ?
