would like to know your thought on a few things

I was wondering what you guys think about hydraulic jack plates and the hot foot throttle for a 2100 pulsare with 300x on it thinking of getting both but was wanting a little more information on them such as pros and cons

Jack plate is a great advantage in setting up the boat. A hyd plate will give you the best of both worlds. Down when taking off and raised for top end.
Foot throttle is a must have for any boat that is capable of speed over mid 70's. Keeping your hands on the wheel to drive is a good thing.
While your at it, I would also add turn signal style controls for the trim and jack plate. Allows you to adjust on the fly with both hands on the wheel.
 
Bob's has a nice jack also. You probably want around 10" to 12" of set back that seems to be a good setup for the 21 Plusare.
 
I have a land & sea foot throddle and love it its the only one that allows u to use it or the hand throddle. Which is nice when your just putting around u don't have to be glued to seat with your foot stuck to pedal.Only proplem is I don't beleive they still make them CHECK AROUND?

one thing, those turn signal type switches are the cat ass. If my outfit was newer(or like yours) those would the first items i'd pick up.:surf:
