Reporting for posterity:
Well, it was bound to happen sooner or later and there are a few other threads with same issue out there. We had an epic Labor Day get together on Sunday and I probably put 6 hours on the motor pulling tubes and water skiers. I remeber seeing the self test run through early in the day and report "Oil Tank 43%". When we got done tubing, I was going to take a friend out for a high speed run and right after we get going the alarm goes off: "Low Oil"...hmmm...that made sense, so I pulled the back seat off and sure enough, I've got 1/2 a tank of oil. So...took her back home and put her to bed...it never went to limp mode.
After some internet research, I'm not the only guy to encounter an oil alarm althought there are variations on this theme that cover everything from "I was out" to a faulty "Tank signal sender" and some seemed to be tied to trim indicators as the engine will pay attention to that in determining whether to ignore a low oil level for the onboard tank:

Additionally, I'll need to see if I'm due for a oil vent bulletin...not sure as they did a bunch when the motor was installed. And I had trimmed all the way twice during the day to untangle a ski rope...don't ask, I was skiing.
I'll add oil when I get back there...didn't have any Evinrude brand stuff, just cheap snowmobile oil. Nope...not putting that in my G2.
