Looks like a great project, tons of potential, But being a jet boat you are gonna need some serious HP to go fast and by fast I mean over 60 mph. As for the water pump, you can use a regular old water pump like on an auto engine or an after market electric pump like they use on alot of race cars. I haven't seen any jet boats that didn't have a water pump. The headers are cooled via water hoses that run right out of the top of the manifold where the normal radiator hook-up is but they usually split into 4 lines 2 for the headers and 2 to relieve the pressure when you are at idle, its easy to put too much water down a header/manifold and it will flow back into the valves and you will get water in the oil. Also I believe on a marine engine you want to degree the cam differently in-order to to prevent this also. I'm no expert but there is a spot on sceamandfly.com that is just for jet boats, I would go there for most of your technical questions regarding the proper set-up for a jet-boat. Good Luck.
